Smoky White Bean Stuffed Poblanos

Roasted poblanos are filled with smoky white beans, brown rice, tomatoes, corn, cumin, lime, cilantro, and pumpkin seeds.

Ingredients

4 poblano peppers, halved lengthwise
1 can white beans, drained and rinsed
1 1/2 cups cooked brown rice
1 small onion, diced
2 garlic cloves, minced
1 cup crushed tomatoes
1/2 cup corn kernels
1 tsp smoked paprika
1 tsp ground cumin
2 tbsp chopped cilantro
1 lime
2 tbsp pumpkin seeds
1 tbsp olive oil
Kosher salt

Instructions

Step 1

Heat the oven to 425 F. Arrange the poblano halves cut-side up in a baking dish and brush them with a little olive oil.

Step 2

Roast the empty poblanos for 10 minutes to start softening them.

Step 3

Cook the onion and garlic in the remaining olive oil until softened, then stir in the white beans, brown rice, crushed tomatoes, corn, smoked paprika, cumin, and salt.

Step 4

Mash a spoonful of the beans into the filling so it holds together, then season with lime juice.

Step 5

Spoon the filling into the poblano halves and bake until the peppers are tender and the filling is hot.

Step 6

Top with the cilantro, pumpkin seeds, and more lime juice before serving.
