Sesame Tofu Lettuce Wraps

Ingredients

14 oz extra-firm tofu, pressed and crumbled
8 oz mushrooms, finely chopped
1 can water chestnuts, drained and chopped
2 scallions, sliced
2 garlic cloves, minced
1 tbsp grated ginger
2 tbsp tamari
1 tbsp rice vinegar
1 tbsp sesame oil
1 tsp maple syrup
1 head butter lettuce, leaves separated
1/2 cup shredded carrot
2 tbsp chopped cilantro

Instructions

Step 1

Whisk the tamari, rice vinegar, sesame oil, maple syrup, ginger, and garlic in a small bowl.

Step 2

Cook the tofu and mushrooms in a skillet over medium-high heat until the mushrooms release their liquid and the tofu begins to brown.

Step 3

Stir in the water chestnuts, scallions, and sauce and cook until glossy.

Step 4

Spoon the tofu filling into lettuce leaves and top with carrot and cilantro.
