Ingredients

2 cups rolled oats
1 tsp baking powder
1 tsp ground cinnamon
1 tbsp orange zest
3/4 cup chopped dried apricots
1 1/2 cups milk
3/4 cup ricotta
2 eggs
1/4 cup maple syrup
1 tsp vanilla extract
2 tbsp melted butter
Pinch of kosher salt

Instructions

Step 1

Heat the oven to 375 F and grease an 8-inch baking dish with some of the melted butter.

Step 2

Stir together the oats, baking powder, cinnamon, orange zest, dried apricots, and salt in the baking dish.

Step 3

Whisk the milk, ricotta, eggs, maple syrup, vanilla, and remaining melted butter in a bowl, then pour it over the oats and stir to combine.

Step 4

Let the mixture stand for 5 minutes so the oats begin absorbing the custard.

Step 5

Bake until the edges are golden and the center is just set, not dry.

Step 6

Let the oatmeal rest for 5 minutes before scooping.
