Ingredients
1 1/2 lb pork tenderloin
1 lb Brussels sprouts, halved
2 apples, sliced
1 red onion, sliced
2 tbsp olive oil
2 tbsp Dijon mustard
1 tbsp apple cider vinegar
1 tbsp maple syrup
1 tsp chopped rosemary
Kosher salt
Black pepper
Instructions
Step 1
Heat the oven to 425 F.
Step 2
Whisk the mustard, apple cider vinegar, maple syrup, rosemary, olive oil, salt, and pepper.
Step 3
Toss the Brussels sprouts, apples, and red onion with half the mustard mixture on a sheet pan.
Step 4
Brush the pork with the remaining mustard mixture and place it on the pan.
Step 5
Roast until the pork is cooked through and the vegetables are tender, then rest before slicing.
