Ingredients

3/4 cup arborio rice
3 cups milk
1 cup water
1/3 cup sugar
1 orange, zested and juiced
1/2 tsp ground cardamom
1 tsp vanilla extract
Pinch of kosher salt

Instructions

Step 1

Combine the rice, milk, water, sugar, orange zest, cardamom, and salt in a heavy saucepan and bring to a gentle simmer.

Step 2

Cook slowly, stirring often and scraping the bottom, until the rice is tender and the pudding is creamy but still loose.

Step 3

Stir in the vanilla and 2 tablespoons of the orange juice, then let the pudding stand for 10 minutes to thicken.

Step 4

Serve warm, or chill until cold and loosen with a splash of milk if needed.
