Coconut Curry Tofu with Green Beans

Ingredients

1 cup jasmine rice
14 oz extra-firm tofu, pressed and cubed
8 oz green beans, trimmed
1/2 onion, sliced
1 tbsp grated ginger
2 garlic cloves, minced
2 tbsp vegan red curry paste
1 can coconut milk
2 tsp tamari
1 tsp brown sugar
1 lime
2 tbsp chopped cilantro
1 tbsp neutral oil
Kosher salt

Instructions

Step 1

Cook the jasmine rice according to package directions.

Step 2

Pat the tofu dry, season it with a pinch of salt, and brown it in the neutral oil until crisp on several sides.

Step 3

Remove the tofu, then cook the onion and green beans in the same pan until the beans turn bright green.

Step 4

Stir in the ginger, garlic, and curry paste and cook until fragrant.

Step 5

Add the coconut milk, tamari, and brown sugar, then return the tofu and simmer until the green beans are tender.

Step 6

Finish with lime juice and cilantro, then serve the curry over the rice.
