Ingredients

5 pears, sliced
1 tbsp lemon juice
1/3 cup brown sugar
1 tsp ground cinnamon
1/4 tsp ground cardamom
3/4 cup rolled oats
1/2 cup all-purpose flour
6 tbsp butter
1 tsp vanilla extract
1/4 cup sunflower seeds
Pinch of kosher salt

Instructions

Step 1

Heat the oven to 375 F and butter a baking dish.

Step 2

Toss the pears with the lemon juice, vanilla, half of the brown sugar, half of the cinnamon, the cardamom, and a pinch of salt; spread them in the dish.

Step 3

Brown the butter in a small pan until it smells nutty and the milk solids are amber, then pull it off the heat.

Step 4

Stir the browned butter with the oats, flour, sunflower seeds, remaining brown sugar, remaining cinnamon, and a pinch of salt to make a crumbly topping.

Step 5

Scatter the topping over the pears and bake until the fruit is bubbling and the top is crisp.

Step 6

Rest for 10 minutes so the juices thicken slightly before serving.
